What to do with the Cilantro Lime Chicken leftovers?!?!


Hello Interwebs...

Currently, I am waiting for dinner to be done. I worked different hours today, so I ended up putting the crock pot meal in LATER then I should have.

BUT... I am really excited about it. It smells AMAZING. It's the Dijon Maple Chicken from Six Sisters' Stuff.

I was going to do baked potatoes on the side, but when I grabbed my potatoes this am they were already sprouting. Apparently, I had them for a little too long... oopsies..... SO we will have steamed broccoli.

Due to dinner not being done yet.. ((AHHH!! IM SO HUNGRY!) I decided to be creative with my Cilantro Lime leftovers. The Cilantro Lime Chicken was also from Six Sisters' stuff. The recipe and my review can be found here.....

I don't have a lot of ingredients, but I do have chicken flavor bouillon and Pace Salsa.

Now....  I decided to make a Chicken soup, with the chicken left overs. Added chicken broth and Salsa. I plan on taking it with me to lunch, to heat up tomorrow with sour cream and cheese.. BAM.

ATTEMPT ONE- I boiled 5 cups of water, and added the Chicken Bouillon. Now to my defense.... the instructions, though are very direct... are confusing. I saw 1 tbsp = 1 cube and thought... "Hey, you must put 1 tbsp in EVERY cup". No. No you don't. You put 1 tsp in every cup.... so instead of 5 teaspoons, I had 15. I tasted it and yuck. (THANK GOODNESS I tasted it before dumping chicken in.. or this would have been a completely different post)

So round 2.. dumped out the broth and AWAYYYYY we go. 
 
..I made new broth.... added left overs from the Cilantro Lime Chicken...

THEN... I added 1/2 of the Pace Medium Salad Jar.

I brought to boil... let simmer for a little bit (I actually let it simmer for 20 minutes, but that is because I forgot about it.. and went to play ScribbleNauts on Wii U. That game is a lot of fun.. in case you were wondering.!)

And then tupperware-d it so I can have lunch tomorrow at work! 

This is a super quick soup... making two meals out of one crock pot adventure! WAHOO!! 

Recipe: 

Cilantro Lime Chicken Leftovers
5 cups Chicken broth (or Bouillon cubes like I did.. because I was out)
1/2 a jar of PACE Medium Salsa
Handful- chopped up Cilantro

Add all ingredients, bring to boil.. simmer to get the flavoring. :) Top with cheese and soup cream!

*suggestions* I think this would have been awesome if I added some rice, and avocado to this. I didn't even have tortilla chips to add!

I had a small cup while I am waiting for dinner to finish... and I would say this is pretty good. :) Very simple.. which always is a fantastic thing. 


Okay, off to play more Scribblenauts. The Dijon chicken will be ready soon!

  1. Sounds good! So many variations that can be done and they all sound yummy! :) Had to laugh about your sprouted potatoes! That happens too often for us! -Six Sisters
